Gluten Free Wraps with Mushroom and Thyme Omelet
Easy and nutritious, this gluten-free wrap makes for a perfect breakfast that absolutely bursts with flavor. Of all the gluten-free recipes that claim to be suitable for vegetarians, Gluten free and paleo veterans, and those new to the diet, this is probably the one that will change your diet the least. A classic combination of herb-infused mushrooms with a touch of garlic will add a distinct twist to the omelet, which is then slipped into our fully organic gluten free wraps.

You’ll need the following ingredients for Gluten Free Wraps with Mushroom and Thyme Omelet:
1 cup of button mushrooms, chopped
3 free range eggs, lightly beaten
1 clove garlic, finely chopped
1 small shallot, sliced
½ tsp fresh thyme, chopped

- 1. Sauté onions, garlic, and thyme in olive oil.
- 2. Stir in mushrooms and cook on medium heat until tender. Put aside.
- 3. Pour the eggs in the pan and fry undisturbed until all is set. You may want to fry it on both sides like a pancake, or follow traditional gluten-free wraps recipes for omelets and leave the upper side slightly runny.
- 4. Slide the omelet onto wraps, add the mushrooms and roll up cutting each wrap into halves.
Make sure the frying pan is non-stick – there’s no other secret of perfectly holding gluten free wraps!
